1 whole chicken
1 stick butter(room temp)
2 lemons
3 sprigs fresh rosemary
1/2 onion
3 cloves garlic
Salt & pepper
Rinse the chicken, and pat dry.
In a bowl combine the butter, finely chopped rosemary leaves off of 1 sprig, and the zest of both lemons and S&P.
Cover the chicken with the butter. Squeeze the juice of 1 lemon all over the outside. Cut the remaining lemon into quarters. Cut the onion into 1/3's. Stuff the remaining 2 sprigs of rosemary, garlic cloves, the onion chunks, and 3/4 of the remaining lemon into the chicken. Bake 350° uncovered until done, about 2 hrs.
