Crawfish Boil





Ingredients


  • 2 quarts water
  • 1 medium white onion, peeled and quartered
  • 1 lemon, quartered
  • 1 bay leaf
  • 2 large garlic cloves, peeled and halved
  • 1 tablespoon kosher salt
  • 3 pounds fresh live crawfish
  • Instructions

    1. 1Find out if your crawfish have been purged. If they haven’t, soak in fresh water for 10 minutes (some people say you need to salt—you don’t).
    2. 2While you’re waiting, place the water in a large Dutch oven and bring to the boil over medium heat.
    3. 3Place the onion, lemon, bay leaf, and garlic in a large piece of cheesecloth.
    4. 4Add the crawfish to the pot and boil 5 minutes longer, when all the shells should be bright red.
    5. Serve immediately, plain or with dippin’ sauces like cocktail sauce, mayonnaise, ketchup, or Tabasco.

Cheeseburger Burritos recipe

Makes: 6 servings 
Prep Time: 10 min
Cook Time: 10 min
Ingredients:

1 1/2 lbs. ground beef 
1/2 cup FRENCH'S® Mustard (any flavor) 
1/2 cup FRENCH'S™ Tomato Ketchup 
1/2 cup dill pickle relish or chopped dill pickle 
1 cup chopped tomato 
1 cup shredded cheddar cheese 
6 flour tortillas (10-inch) 
Directions:

BROWN ground beef in large skillet; drain. Stir in Mustard, Ketchup and relish and bring to a boil over medium-high heat. Reduce heat to low and simmer 5 minutes.STIR in tomato and cheese. Divide mixture evenly among tortillas. Garnish with lettuce and additional tomato and cheese, if desired. Fold in ends and roll up tortillas.

Crockpot Curried Sausages



Curried Sausages Recipe
1 tablespoon of cooking oil
1 onion, diced
4 cloves of garlic, crushed
8 Pork or Beef Italian sausages, quartered
2 tablespoons of curry powder
2 tablespoons of smoked paprika
2 tablespoons of flour
1 tablespoon of Worcestershire sauce
1 can of diced tomatoes
1 glass of water, more or less
1 pinch ea. Dried/fresh herbs,  oregano and fresh rosemary
Salt and pepper
Sauté the onion in the oil until softened, add the garlic and sausages and cook until browned abit. Add the curry powder, paprika, herbs and flour, cook for a minute or two. Add the Worcestershire sauce, tomatoes and water and bring to the boil. Season well. Transfer to the slow cooker and cook on low for 4-8 hours (I did 8 hours because I was out of the house, but 4 hours is plenty).
I added vegetables - carrot, celery and zucchini when I added everything into the crockpot and it cooked down well. 1/2 pound of frozen spinach and half a cup of frozen peas in the final 20mins (while the mashed potatoes was in progress).
**This would go well with rice, pasta or mashed potatoes. Add as many or as little vegetables as you like

~Sky's Fried Chicken Gizzards

2 pound chicken gizzards
1/2 cup all purpose flour
salt and pepper to taste (I use lots of pepper)
vegetable oil for frying

Wash gizzards thoroughly under running cold water. And put them in a large pot of cold water to parboil. Bring water to boiling and continue boiling for 20 minutes.

Combine flour and salt and pepper in a shallow bowl. Set aside. Once the gizzards have finished cooking, drain them in a colander and allow to cool.

Preheat enough vegetable oil to cover gizzards in a heavy skillet. (I use my cast iron skillet). Turn the heat to medium high. Coat gizzards well with seasoned flour and place into hot vegetable oil. Don't overcrowd the skillet. Cook gizzards on both sides until brown.

Turn down the heat to medium, then cover skillet with lid and cook for an additional 10 minutes. Once done remove from skillet and allow to drain on paper towels. Enjoy!

    • Sautée the onions and garlic add salt and pepper cook for 2-3 mins add raw shrimp in season with half a teaspoon of cayenne pepper chili powder garlic powder salt and seasoned salt cook until partial pink then add sausage let cook for 6 mins add can of tomatoes break up tomatoes add can of tomato sauce let simmer for 6-7 min

    • For rice use Jasmine use one cup rice one cup water butter tsp of salt and olive oil cover and let boil for 15 mins turn off let steam 15 more

Shell fish Etouffee. Crawfish, Crab, Lobster your choice
