CHICKEN CABBAGE STIR FRY

Ingredients
~ 3 chicken breast halves
~1 teaspoon oil of your liking
~3 cups green cabbage, shredded
~1/2 cup diced red bell peppers
~ 1 tablespoon cornstarch
~1⁄2 teaspoon ground ginger
~1 teaspoon garlic powder
~1⁄2 cup water
~Soy sauce to taste 
Directions
1. Cut chicken breasts into strips.
2. Heat oil in a frying pan.
3. Add chicken strips and stir fry over medium-high heat, turning constantly until done.
4. Add cabbage and red peppers and sauté 2 minutes until cabbage is crisp-tender.
5. Mix cornstarch and seasonings; add water and soy sauce, and mix until smooth.
6. Stir sauce into chicken/cabbage mixture.
7. Cook until sauce has thickened and chicken is coated, about 1 minute.
8. Refrigerate leftovers within 2 hours. If you have any left over that is wink emoticon
(You can add onions and red peppers to taste)

Hot Wings


Season with salt & garlic pepper
Add chicken seasoning to flour
Coat wings n flour

Fry n pan with oil
Turn to evenly cook
Let drain om napkin
For hot sauce:
Red hot sauce
Brown sugar
Regular sugar
Butter
Red hot seasoning
Honey

Simmer all ingredients together til blended and coat chicken. 

Bake on 350 for 10 mins and pour remaining sauce over chicken.

Southern Baked Beans



6 slices bacon, diced


1 big yellow onion chopped


1 big bell pepper chopped

1/2 teaspoon salt

1/4 teaspoon ground black pepper

1/4 cups brown sugar

2 cans diced tomatoes

4 (28-ounce) cans pork and beans



Preheat oven to 325

add all ingredients to suitable baking pan

like a 13x9x2 or bigger and mix well

Top with bacon slices and bake for 30 to 45 min.


Lazy Ravioli Lasagna

Lazy lasagna
Ingredients 
Your favorite ravioli or pierogi 
Your favorite tomato sauce 
4 cups of your favorite shredded cheese
Directions 
Just like lasagna start doing layers sauce, pasta, cheese and repeat till all done. Bake at 350° for 35 min or until the pasta is done and sauce is bubbling and cheese is melted.

2 containers (15 ounces each) ricotta cheese
2 cups (8 ounces) shredded mozzarella cheese, divided
2 eggs
1 teaspoon Garlic Powder
1 teaspoon Italian Seasoning
1 teaspoon Parsley Flakes
1/2 teaspoon salt
1/4 teaspoon Black Pepper, Ground
1 jar (26 ounces) marinara or other pasta sauce
1/2 cup water
9 uncooked lasagna noodles
1/4 cup grated Parmesan cheese

Directions

15 mins
Prep time
1 hr 
Cook time

Preheat oven to 350°F. 

Mix ricotta cheese, 1 1/2 cups of the mozzarella cheese, eggs, garlic powder, Italian seasoning, parsley, salt and pepper in large bowl until well blended. 

Pour marinara sauce into medium bowl. Pour water into empty jar; cover and shake well. Add to marinara sauce; mix well.
Spread about 1 cup of the sauce on the bottom of 13x9-inch baking dish. 

Top with 3 of the lasagna noodles. Spread 1/2 of the cheese mixture over noodles. Repeat sauce, noodles and cheese layer once. 

Top with remaining noodles and sauce, making sure to cover noodles with sauce. Sprinkle with remaining 1/2 cup mozzarella cheese and Parmesan cheese. 

Cover with foil.


Bake 45 minutes. Remove foil. Bake 15 minutes longer or until noodles are tender. Let stand 15 minutes before cutting. Serve with additional marinara sauce, if desired.

Cooking tip

Substitution Tip: Prepare as directed, using 1 tablespoon  Crushed Garlic made from Fresh Garlic in place of the Garlic Powder.

Make Ahead:   Prepare lasagna a day ahead as directed up to Step 2. Refrigerate until ready to bake.  Remove from refrigerator. Let stand at room temperature while preheating oven.  Bake as directed.

For the rub I blended equal parts:



Coriander, Cumin, Garlic, Turmeric, Ginger, Onion, 

Chili Powder, Black Pepper, Cloves, Paprika, 

Cinnamon and Nutmeg.


I used Chicken tenderloins (as they were cheap and 

on sale)


I put the chicken in a bag and sprinkled two 

teaspoons of rub and massaged the chicken 

(through  the  bag) I let this sit in the fridge for 

about two hours.

I baked the chicken at 375 for about 35 minutes 

(vary time depending on the thickness of the 

tenderloins)  

uncovered. While the chicken was cooking I sliced 

zucchini, squash and sautéed them in a teaspoon of 

avocado oil. 

The last 5 minutes I threw in about three handfuls of 

fresh spinach and tossed well so it wilted. 


The black beans were from a can wink emoticon Per serving it 

came in around 400 cals

Crunchy Bacon Cheeseburger Recipe



LOOSE MEAT SANDWICH



1 lb ground beef round or 1 lb ground sirloin

1 tablespoon fat like lard or Crisco (if meat is round or sirloin) 

Salt & Pepper to taste

1 small Onion, chopped fine

water to cover

sliced dill pickles


Using a cast iron skillet with lard/crisco brown meat 

& onions till done, drain off 

grease if any and return to skillet.

Break ground beef up in skillet into small crumbles 

using the back of a wooden 

spoon.

Add 1 Tbsp Yellow Mustard, 1 Tbsp White Vinegar 

and 1 Tbsp Sugar and just 

enough water to barely cover meat in the pan.

Cook, at a simmer, till water is all cooked out-

between 15-20 minutes.

Heat your hamburger buns-they're traditionally 

steamed for loose meats.

When buns are warm, put yellow mustard on them 

and add some dill pickle 

slices

NOTE: *If you start changing this recipe and using 


things like olive oil for the 

fat 

and Dijon or honey mustard for the yellow mustard, 

And don't add any liquid 

smoke or Worcestershire sauce, you will not get the 

traditional yummy taste of 

a loose meat sandwich.

Philadelphia Mac and cheesesteak Mac and Cheese

INGREDIENTS
1 lb. Medium Shells, cooked al dente
24 oz. Thinly Sliced Beef, chopped & cooked
1 tbsp. olive oil
1 green pepper, chopped
1 shallot, chopped
2 tbsp. butter
2 tbsp. flour
4 c. milk
2 c. White Cheddar, shredded ½ c. Provolone Cheese, shredded
1/c. cheddar cheese, shredded 1 tsp. dry mustard 1 tbsp. Worcestershire Sauce salt and pepper, to taste ½ c. Panko Bread Crumbs parsley flakes
INSTRUCTIONS 1. Preheat oven to 350 Degrees.
2. In a medium saute pan, heat the olive oil on medium heat and cook the shallots and green peppers until softened and translucent. Set aside.
3. In a large sauce pan, melt the butter and sprinkle in the flour. Whisk and the mixture will become lumpy. Slowly pour in the milk to smooth out the lumps. Once the milk has been completely added, bring to a slight boil and sauce will thicken.
4. Add the white cheddar and provolone to the milk and stir until smooth. Add the dry mustard, Worcestershire Sauce, and salt and pepper. Add the cooked pasta and stir. Finally, add the green pepper, shallots, beef, and cheddar. Stir until cheese is melted (add more milk if desired).
5. Pour the mac­ n ­cheese in sprayed desired ramekins, top off with sprinkled Panko crumbs and extra provolone cheese, and bake for 15 minutes.
6. * You don't have to bake if you don't want to

Chicken Fried Chicken with Cream Gravy Recipe




 
Be sure to make this with cream gravy.
4 boneless, skinless chicken breasts
1 egg
1/2 cup milk
1 to 2 cups all-purpose flour
cooking oil or melted Crisco
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/4 teaspoon paprika
1/4 teaspoon white pepper
Beat together the egg and milk and set aside. Mix together the salt, black pepper, paprika and white pepper and sprinkle on both sides of chicken breasts.
Dredge the chicken breasts in the flour, shaking off the excess. Then dip each piece in the egg/milk mixture, then back in the flour. (You're going to get your hands messy here, so take your rings off.) Set chicken pieces aside on a piece of waxed paper.
Heat the cooking oil in a large cast-iron or other heavy skillet over medium-high heat for a few minutes. Oil should be about a half-inch deep in the pan. Check the temperature with a drop of water; if it pops and spits back at you, it's ready.
With a long-handled fork, carefully place each chicken breast into the hot oil. Protect yourself (and your kitchen) from the popping grease that results. Fry chicken breasts on both sides, turning once, until golden brown. Reduce heat to low, cover and cook 15 to 18 minutes until chicken pieces are done through. Drain on paper towels.
*Cream Gravy
*After the chicken is removed from the pan, pour off all but about 2 tablespoons of oil, keeping as many as possible of the browned bits in the pan. Heat the oil over medium heat until hot.
Sprinkle 3 tablespoons flour (use the left-over flour from the chicken fried chicken recipe (waste not -- want not) in the hot oil. Stir with a wooden spoon, quickly, to brown the flour.
Gradually stir in 3/4 cup milk and 3/4 cup water, mixed together, stirring constantly with the wooden spoon and mashing out any lumps. Lower heat, and gravy will begin to thicken. Continue cooking and stirring a few minutes until gravy reaches desired consistency. Check seasonings and add more salt and pepper according to your taste.
*Note to persons new to Cream Gravy:* Gravy-making is an inexact science. Cream gravy is supposed to be rather thick, but if you think it's too thick, add more liquid until you're satisfied with it.

New Potatoes Oven Recipe


Preheat oven 375*
Scrub 1 1/2 to 2 lbs new white or red potatoes
Cut into 4ths (do not peel)
Place into a small greased, casserole dish cut up 2 to 3 Tablespoons butter and arrange over top potatoes
Sprinkle 1 Tablespoon, Italian Seasoning or 1 Tablespoon parsley over potatoes
Sprinkle 1 Tablespoon minced garlic over potatoes

5 or 6 strips of your favorite Bacon
Bake 375 for 10 minutes, uncovered, turn potatoes over and continue to cook for 1 hour uncovered

Homemade Lima Bean Soup recipe

Homemade Lima Bean Soup

(Tonights Dinner)
3 Cups dried lima beans
Ham bones(or ham hocks)
Shredded ham from bones(or hocks)
1 or 2 chopped garlic cloves(I used 2)
1/2 chopped yellow onion
salt and pepper to taste* I used more pepper than salt(not much into salt)
1TSP seasoning salt
2 stalks chopped celery stalks
about a 1 TSP parsley flakes
2 cans mixed vegi's(or 1 frozen bag mixed vegi's)
* this was a 2 day cooking process(I used dutch oven then crock pot)-which I have to admit turned out Awesome
In large pot add bones(or hocks) add water to cover, boil until meat falls off,take out and debone meat off, add beans and boil until soft-watching the level of broth-add water when needed(or add to crock and cook on high 8 hours-check broth level)
Once beans are soft, add garlic,onion,salt n pepper,seasoning salt and celery-boil until onions are soft, then add vegi's, cook on medium for about an hour..Serve
If using crockpot, once beans are soft, add everything except vegi's,cook 4 hours on high, add vegi's for about an hour or 2 on low...Serve

Mandarin Chicken Recipe

Ingredients
1 whole boneless skinless chicken breast, cut into 4 equal pieces ( 1lb)
vegetable oil cooking spray
2/3 cup sugar ( or less, according to taste)
1/4 cup soy sauce
1 tablespoon lemon juice
1 tablespoon vegetable oil
1/2 teaspoon minced fresh garlic
1/2 teaspoon minced fresh ginger
1/4 cup water
4 teaspoons cornstarch
Directions
Spray chicken breasts with vegetable oil spray.
Grill chicken breasts 4-6 minutes per side or until done (chicken should be brown in spots).
Chop chicken into bite size pieces, set aside.
Combine sugar, soy sauce, lemon juice, oil, garlic and ginger in a small saucepan.
Heat over medium until sugar is dissolved, stirring often.
Bring to boil.
Combine cornstarch and water.
Add to sauce pan, stirring often.
Reduce heat and simmer 4-6 minutes or until sauce thickens.
Pour chicken into a large frying pan over medium heat.
Heat until chicken sizzles, then reduce heat and pour sauce over the chicken.
Heat through.

Crockpot Honey Chicken

Crockpot Honey Sriracha Chicken

Ingredients
• 1 to 1 1/2 pounds boneless skinless chicken breasts
• 1/4 cup Sriracha sauce
• 1/4 cup honey
• 1 tablespoon soy sauce
• 1 tablespoon lime juice
• For the drizzle:
• 1/4 cup mayo
• 1/4 cup greek yogurt
• 1/4 cup sweet chili sauce
• 2 tablespoons honey
• 2 teaspoons hot sauce

Instructions
1. Cut chicken into large bite sized chunks
2. Place in crock
3. In a bowl mix together Sriracha, 1/4 cup honey, soy sauce and lime juice
4. Pour over chicken, cover and cook on high for 2-4 hours or low for 5-7 until chicken is cooked through
5. Whisk together drizzle ingredients (You can use 1/2 cup mayo or 1/2 cup greek yogurt instead of 1/4 cup of each. I used all mayo.)
6. Serve chicken with rice or noodles as desired with a generous drizzle of the sauce


Simple Oven Fried Chicken -- Low Fat

INGREDIENTS
SERVINGS 2
2 skinless chicken breast halves, bone in
vegetable oil cooking spray
1⁄2 teaspoon salt
1⁄4 teaspoon pepper, freshly ground
1 teaspoon paprika
DIRECTIONS
Preheat oven to 400 degrees Fahrenheit.
Sprinkle salt and pepper over both sides of chicken.
Spray chicken all over with veggies spray.
Sprinkle all over with paprika.
Fit a rack into a roasting pan; spray with veggie spray.
Place chicken bone side down on roaster rack.
Roast for approximately 45 minutes or until juices run clear.

POPEYE'S SPICY CHICKEN - (copycat)

3 eggs
1/3 cup water
1 cup hot red pepper sauce (I like Louisiana Hot Sauce)
4 cups flour
2 teaspoon pepper
2 teaspoon paprika
3 teaspoons cayenne pepper
1 quart buttermilk (optional)
Salt, Pepper, and Garlic Powder (to taste)
1 (1 to 2 1/2-pound) chicken, cut into pieces
Peanut Oil, for frying

1. Place cut-up chicken in a large bowl, and cover with buttermilk. Cover and chill for two hours, or overnight. This is an optional (but recommended) step.

2. In a large bowl, add eggs, water, and red pepper sauce. Whisk until combined.

3. In a large gallon freezer bag, mix flour, pepper, paprika, and cayenne.

4. Remove chicken from buttermilk (if marinated) and sprinkle lightly with salt, pepper, and garlic powder.

5. Place all chicken pieces in freezer bag with flour mixture. Shake until all pieces are evenly coated.

6. Remove chicken pieces one at a time, shaking excess flour. Dip each piece in the egg mixture, and return to bag of flour. After all pieces of been dipped in the egg mixture and put back in the bag, give it a second shake to coat chicken pieces again.

7. Heat oil in deep fryer or deep pan to 350 degrees. Working in batches, drop each piece of chicken into the hot oil. Fry for 15-18 minutes, or until golden brown, turning occasionally if oil does not completely cover chicken. Keep in mind that dark meat chicken takes longer to cook than white meat. Watch your wing segments, as well; these will finish cooking first.

1 container of Yoplait Greek yogurt strawberry or raspberry flavor 5.3 oz

1/2 block regular bar cream cheese soften well

1& 1/2 cups real heavy cream

Sugar for whipped cream anywhere from 3/4 to 1 cup depends on how sweet 

you like ,can use less if diabetic or wanting to cut calories ,use at least 1/2 tho..

12 oz bag frozen raspberries and sugar to sweeten to your taste

3 full Graham crackers

Pour frozen raspberries into bowl about 1/2 of them sweeten as you like , let sit 

, crush 1 graham finely sprinkle 1/2 tsp sugar into , place in parfait cup add 

sweeten raspberries then half of container of yogurt , let sit and whip your 

cream then sweeten add in cream cheese at last mix minimum just till cream 

cheese incorporated , add a large scope over your yogurt in parfait glass then 

add more sweetened berries for looks finally 1 dollop of cream and crushed 

graham cracker for prettiness chill and serve , recipes makes 2 large desserts 

can double for more .

Pork Shepherd's Pie with Apple Cider


It freezes well, reheats well and is full of flavor.

Ingredients:
2 tablespoons of cooking oil
1 brown onion, diced
3 cloves of garlic, crushed
1 tablespoon of crushed ginger
1/2 a teaspoon of oregano
1/2 teaspoon of pork mince
2 tablespoons of plain flour
1 tablespoon of soy sauce
1 bottle of regular apple cider
1 cup of chicken stock
1/8th of a cabbage, chopped
1 granny smith apple skin on, cored and diced
Plenty of salt and pepper

2 pounds of royal blue potatoes, peeled and diced
1 stick of butter
1 teaspoon of Dijon mustard
1/2 cup of milk or cream
Plenty of salt and pepper

Method:
Sauté the onion in the oil. Add the garlic, ginger and pork mince then brown. Add the flour and cook out for 2 minutes. Add the soy, cider, oregano, stock, cabbage, apple and bring to the boil. Season well and allow to simmer for 30 minutes until the sauce is thick and the vegetable and fruit has softened. Transfer into a deep casserole dish.
Boil the potatoes until soft, drain well and mash with the milk, butter, mustard and seasoning. Spoon over the top of the pork mixture.

At this stage you can bake it until a bit browned, refrigerate it for several days until reheating in the oven or freeze it for up to 3 months before thawing and reheating in the oven.

**The addition of ginger goes so beautifully in this dish with the apple and pork. The Dijon mustard makes for a flavoursome mashed potatoes. Herbs such as parsley or chives would suit well either in the pork or potato.**
