Fajita Meatloaf



1 Tbsp  oil, 

1 ea. Green and Red pepper cut into strips, 

1 small onion cut into wedge then strips, 

1 pk. taco seasoning, 

1/4 cup water, 

2 pounds ground beef, 

1 1/2 cups cooked long grain white rice,

2 eggs,1 1/2 cups Mexican style finely shredded four cheeses, divided, 

1 cup chunky salsa.

Pre-  Heat oven to 350*. 


Heat oil in pan and add peppers & onion, cook & stir 5 mins. 


Spoon into a bowl, cool 10 mins. Add meat, rice, eggs, 1 cup cheese,& 1/2 cup 

salsa to veg. mix. 

mix to blend. 

Shape into a loaf, put in loaf pan sprayed W/ cooking spray. Bake 55 mins. or 

to

Meatless Mexican Breakfast Flautas

Ingredients
  • 4 large eggs
  • 2 teaspoons water or milk (if you prefer your eggs without liquid, you can omit)
  • ¾ teaspoon taco seasoning
  • salt and pepper to taste
  • ½ teaspoon canola oil
  • 1 tablespoon butter
  • ¼ cup pico de gallo
  • 5-6 flour or corn tortillas
  • ¼ cup shredded Mexican cheese
  • olive oil or canola oil non-stick cooking spray
Instructions
  1. Preheat oven to 425 degrees.
  2. In a small sized bowl, whisk together eggs, water or milk, taco seasoning and salt and pepper.
  3. Over medium heat, add in canola oil and butter to a skillet and melt together.
  4. Next add egg mixture and pico de gallo to skillet and stir eggs to scramble until set.
  5. When eggs are scrambled, spoon egg mixture down the center of each tortilla and sprinkle with cheese.
  6. Tightly roll each tortilla and carefully place open side down on a small baking pan.
  7. Spray tortillas with non-stick cooking spray.
  8. Bake flautas for 15-17 minutes or until tortillas are crispy, set and golden brown and serve.
  9. Optional: Sprinkle additional cheese and pico de gallo over tops of flautas for garnish.

Cheeseburger Burritos recipe

Makes: 6 servings

Ingredients:

1 1/2 lbs. ground beef 
1/2 cup FRENCH'S® Mustard (any flavor) 
1/2 cup FRENCH'S™ Tomato Ketchup 
1/2 cup dill pickle relish or chopped dill pickle 
1 cup chopped tomato 
1 cup shredded cheddar cheese 
6 flour tortillas (10-inch) 
Directions:

BROWN ground beef in large skillet; drain. Stir in Mustard, Ketchup and relish and bring to a boil over medium-high heat. Reduce heat to low and simmer 5 minutes.STIR in tomato and cheese. Divide mixture evenly among tortillas. Garnish with lettuce and additional tomato and cheese, if desired. Fold in ends and roll up tortillas.

Tequila Lime Chicken


Ingredients
4 limes
1 cup tequila
1/4 cup olive oil
2 teaspoons kosher salt
5 cloves garlic
1 jalapeno, sliced
1/2 bunch chopped fresh cilantro
12 boneless, skinless chicken breasts
2 cups grated Monterey Jack
Options for servings:
Corn tortillas
Flour tortillas
Grated Monterey Jack
Pico de gallo
Jalapeno slices
Lime wedges
Avocado slices
Sour cream
Directions
Slice open the limes and squeeze the juice into a food processor or blender. Add the tequila, olive oil, salt, garlic, jalapenos and cilantro. Blend the mixture until totally combined. Add the chicken to a large plastic bag and pour in the lime-tequila mixture. Seal the bag and marinate in the fridge for several hours or overnight.

Remove the chicken from the bag and grill it over medium-high heat. Rotate the chicken 45-degrees on both sides to create nice grill marks, and continue grilling until the chicken is cooked through, 4 to 5 minutes per side.

Melt the Monterey Jack over the top of the sliced chicken breasts.

Slice the chicken and serve it on a plate topped with the sides.



Easy Mexican Casserole

Easy Mexican Casserole
1 pound lean ground beef
1 can Ranch Style beans
1 10-12 ounce bag tortilla chips, crushed
1 can Ro-tel tomatoes
1 small onion, chopped
2 cups shredded cheddar cheese, divided
1 package taco seasoning
1 can cream of chicken soup
1/2 cup water
sour cream and salsa for serving
Preheat oven to 325 degrees. In a large skillet, brown meat and drain off fat. Stir in beans, tomatoes, onion, taco seasoning, soup and water. Simmer over medium-low heat until everything is well combined and heated through.
Grease a 9×13 casserole dish. Put down a layer of crushed tortilla chips, followed by a layer of the meat/bean mixture, then half of the cheddar cheese. Repeat layers. Cover with foil and bake for 20-30 minutes, or until bubbly.
Let sit for 5-10 minutes before serving. Top with sour cream and salsa

Guacamole


2 ripe Haas avocados
2 small jalapenos, seeded and finely chopped
1/2 small onion, finely chopped
1 medium tomato, seeded and diced
2 garlic cloves, cracked
2 teaspoon coarse salt
Juice of 2 lemons
Tortilla chips and vegetables


Halve the avocados and remove the pit. Scoop the flesh into a medium bowl and add the jalapenos, 
onions and tomatoes. Chop the garlic and sprinkle it with salt. Using the side of your knife, apply pressure 
with your hand and crush the garlic and salt into a paste. Add the mixture along with the lemon juice to 
the avocados and mash with a fork until fairly smooth.

Place in a serving dish and serve with tortilla chips and vegetables.

Makes: About 4 servings.

Red Pepper Hummus

Makes 2 cups
Hands-on Time: 15 minutes
Total Time: 25 minutes (plus soaking time)
INGREDIENTS:
  • 1 cup dry chickpeas (aka garbanzo beans),* picked over to remove any stones
  • 2 red bell peppers, quartered, stemmed, seeded and ribs removed
  • Juice of 1 lemon (about 3 tbsp)
  • 1/4 cup tahini paste 1 clove garlic, whole or roughly chopped
  • 2 tbsp extra-virgin olive oil, plus additional for drizzling, optional
  • 1/2 tsp coarse sea salt
INSTRUCTIONS:
  1. To a large saucepan, add chickpeas and cover with water. Let soak for 8 to 24 hours, or until they almost double in size. (QUICK-SOAKING TRICK: Instead of soaking overnight, bring chickpeas to a boil in a pot of water; boil for 1 minute. Remove from heat and set aside to soak in hot water, covered, for 1 hour.)
  2. After chickpeas have soaked, drain and cover again with water. Bring to a boil on medium-high. Boil for 1 minute, then reduce heat and simmer, partially covered, until chickpeas are tender, 2 hours.
  3. Meanwhile, position oven rack 5 inches below heating element and preheat broiler to high. On a foil-lined baking sheet, place pepper quarters, skin side up, and broil until skins of peppers are blistered and charred, 10 to 12 minutes. Remove peppers from oven and place in a resealable plastic bag; set aside to steam for 10 minutes. Remove peppers from bag and gently peel off and discard the blackened skin. Finely chop one of the pepper quarters and set aside for garnish. Coarsely chop remaining peppers and set aside.
  4. In a food processor, process lemon juice and tahini for 1 minute, scraping down sides of bowl halfway through. Process for the full minute to ensure mixture is creamy and smooth. Add garlic, 2 tbsp oil and salt; process for another minute or until no lumps remain and mixture is very smooth.
  5. Drain chickpeas. To food processor, add chickpeas and blend for 1 minute, scraping down sides of bowl after 30 seconds. Add coarsely chopped peppers and process until smooth. Continue processing, scraping down bowl as necessary, until mixture is well blended and smooth. Add 1 to 2 tbsp water and blend until mixture is creamy. Top hummus with reserved finely chopped red pepper and drizzle with additional oil (if using). Serve immediately or refrigerate in a covered container for up to 5 days. If hummus thickens, stir in 1 tbsp water before serving.
*TIME-SAVER: If you don't have time to soak the beans, you can use 1 15-oz BPA-free can of chickpeas, drained and rinsed.

Taco Casserole









2 lbs of Ground Beef 
2 Cups of Shredded Cheddar Cheese
2 Jalapenos diced w seeds
1 Onion diced
4 Cloves of Garlic
2 TBS of Olive Oil
4 packets of Goya Mexican Rub 
1/3 Cup of Parmesan Cheese
1-11.5 oz can of Tomato Juice 
2 cups of cooked elbow noodle. 
Direction
Dice onion, garlic, and jalapenos. In a hot skillet add you'd our oil, heat the oil until it sizzles. After it's hot add your onion, garlic, and jalapenos till translucent on low heat. Add your ground beef and cook five mints till it starts to brown, then add your Big Thunder Rub & Goya and cook till all brown then drain. In a deep casserole dish add your pasta, ground beef, tomato juice, Parmesan cheese and stir till well blended. Top w cheese and cover w foil. Bake at 350 for 35 mins w foil on. Remove the foil and brown your cheese for 10 mins serve hot w garlic bread! Enjoy


Mexican Tostadas Recipe



This recipe details how to fry up corn tortillas to make the tostada shells. If you are using packaged shells, before serving them, spread them out on a baking sheet, or directly on oven racks, and heat them at 350°F for 4-5 minutes, or until you can smell the aroma of them cooking. Don't keep them in the oven too long, or they will get burnt. Just heat them enough to lightly toast them.
Ingredients
Grapeseed oil, canola, or other high smoke-point cooking oil
12 corn tortillas
Salt
Refried beans (2 15-ounce cans, or you can make your own refried beans)
1/2 head iceberg lettuce, sliced thin and seasoned with salt and vinegar (no oil)
2 medium tomatoes, chopped
1-2 chopped peeled and pitted avocados or guacamole
8 ounces grated Monterey Jack, Cheddar, or crumbled queso fresco and/or cotija cheese
1 cup of Salsa or 1/2 cup sliced pickled jalapeños
A handful of chopped fresh cilantro
Method
1 Heat refried beans in a frying pan, until warm. If you are using regular canned beans, drain them, then add them to the pan with a little water, mash them as you heat them. For extra flavor for the beans you can stir in a tablespoon of bacon fat to them and/or a big slice of cheddar cheese. Keep the beans on warm while you prepare the tortillas, adding water to them as necessary to keep a creamy consistency.




Fish Tacos

Ingredients:

1½ pounds of tilapia or white fish fillets
1 cup all-purpose flour
1 teaspoon salt
½ teaspoon Old Bay seasoning
½ teaspoon dried oregano
½ teaspoon garlic powder
¼ teaspoon freshly ground black pepper
1 cup beer
Canola oil for frying
Blue corn tortillas
Shredded iceberg lettuce
Directions:

1. Mix the flour with the salt, Old Bay seasoning, oregano, garlic powder, salt and pepper. Whisk the beer into the flour mixture until well blended.
2. Rinse the fish with water and pat dry. Cut the fillets into twelve 1-by-5-inch pieces. Pour canola oil into a deep skillet to a depth of 3 to 4 inches. Heat to 350°F.
3. Dip fish into batter and coat all sides. Place several pieces of fish in a single layer in hot oil. Cook for about 4 minutes or until the batter is crispy and golden brown. Repeat with the remaining fish. Lay them on a plate covered in a paper towel.
4. Heat the corn tortillas in a skillet until soft and hot.
5. To assemble, layer the lettuce, place the fish on top, add salsa (pico de gallo) and the white sauce. Top with a squeeze of lime. Fold tortilla over to serve.

Pico de Gallo
For fresh salsa, combine ingredients. Refrigerate until ready to serve.

5 fresh plum tomatoes, stems and seeds removed, finely diced
¼ white onion, finely diced
1 jalapeño chili pepper (stems, ribs, seeds and removed), finely diced
1 serrano chili pepper (stems, ribs, and seeds removed), finely diced
½ cup cilantro leaves, finely chopped
4 scallions (the green and white parts) finely diced
Salt and pepper to taste
Juice of 1 lime

White Sauce: 
½ cup mayonnaise
¼ cup sour cream
Juice of 1 lime
Mix ingredients until blended. Refrigerate until ready to serve.

Taco Seasoning



1 tablespoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon dried oregano
1/2 teaspoon paprika
1 1/2 teaspoons ground cumin
1 teaspoon sea salt
1 teaspoon black pepper

Directions

In a small bowl, mix together chili powder, garlic powder, onion powder, red pepper flakes, oregano, paprika, cumin, salt and pepper. Store in an airtight container.

Cheesy Chicken Empanadas

Ingredients
1 tablespoon olive oil
1/2 small red onion, finely chopped
1 jalapeno, finely diced, seeded and ribs removed
2 cloves garlic, minced
3 green onions, thinly sliced
Kosher salt and freshly ground pepper
1 1/2 cups shredded then diced cooked chicken breasts (from leftover chicken)
1 cup shredded Monterey and Cheddar cheese blend
4 ounces cream cheese, diced
Dash of hot sauce
1 egg
Flour, for rolling
1 (15-ounce) package refrigerated pie dough
1 tablespoon chipotle chile powder
Chili Lime Dipping Sauce, recipe follows
Directions
Preheat the oven to 375 degrees F. Coat a baking sheet with nonstick spray.

Place a large saute pan over medium heat and add oil. Once the oil is hot, add the onion, jalapeno, garlic, green onions and saute until tender, about 3 minutes. Season with salt and pepper.

In a large bowl, combine the chicken, cheese, cream cheese, sauteed mixture and hot sauce together.

Whisk the egg in a small bowl. Set aside. Sprinkle flour on your work surface and unroll the pie dough.

Roll out each round to a 13-inch circle. Cut each crust into 8 (4-inch) circles with a biscuit cutter. You can knead the scraps and then roll out, if necessary. Spoon about 1 heaping tablespoon of the chicken mixture into the center of each round. Brush the edges with the egg wash and fold each circle in half. Gently press on the top of the empanada to release any air. Seal the edges with a fork and brush the top with the remaining egg wash. Sprinkle with chile powder. Bake until golden brown, about 20 minutes.

Serve the chicken empanadas with the Chili Lime Dipping Sauce.

Chili Lime Dipping Sauce:
1 cup Greek yogurt
1 chipotle pepper (canned in adobo sauce), minced
Juice and zest of 1 lime
Combine the yogurt, chipotle and lime zest and juice in a bowl.

Chile Turkey

Ingredients

For the Turkey:
6 ancho chiles, stemmed and seeded
6 guajillo chiles, stemmed and seeded
10 whole cloves garlic
¼ small white onion, finely chopped (about ¼ cup)
1/3 cup  Bitter Orange Marinade
3 tbsp. Corn Oil, plus more for gravy, if needed
2 tbsp. brown sugar
2 packets Sazón  GOYA® with Coriander and Annatto
1 tsp. GOYA® Adobo All-Purpose Seasoning with Pepper, plus more to taste
1 turkey (12-14 lbs.), thawed and patted dry (giblets removed and reserved for another use, if desired)


For the Gravy:
¼ cup Port , or other sweet red wine
1 packets GOYA® Cubitos Chicken Bouillon, mixed with 2 cups water
1/3 cup flour

Directions

Marinate the Turkey:
1. Heat medium skillet over medium-high heat. Add chiles. Toast, turning once, until fragrant, about 2 minutes. Transfer chiles to small bowl; cover with 1 cup boiling water. Let soak, flipping occasionally, until softened, about 20 minutes. Meanwhile, in same skillet over medium-high heat, toast garlic cloves until paper turns golden brown on all sides, about 7 minutes; set aside until cool enough to handle. Peel garlic. Transfer chiles and their liquid, garlic, onion, naranja agria, oil, brown sugar, Sazón and 1 tsp. Adobo to blender. Puree until smooth, about 2 minutes. Reserve ¾ cup chile marinade for gravy; cover and refrigerate. Set remaining chile marinade aside.
2. Place turkey in non-aluminum container large enough to hold turkey and marinade. Season cavity and skin of turkey with Adobo. Rub turkey all over with reserved chile marinade, including cavity, until completely coated; cover and refrigerate at least 12 hours, or up to 48 hours. Bring turkey to room temperature 1 hour before roasting.

Roast the Turkey:
3. Heat oven to 450°F. Set turkey on rack set inside roasting pan; brush turkey with marinade from bottom of container until coated; discard remaining marinade. Tie turkey legs together with kitchen twine, tuck wings behind back and tuck excess skin from neck into top cavity. Pour 2 cups water in bottom of roasting pan. Lightly season turkey with Adobo. Roast turkey 30 minutes. Reduce heat to 350°F. Baste turkey. Add 1 cup water to bottom of roasting pan; loosely cover turkey with foil; rotate pan. Roast, basting occasionally, until skin is dark golden brown and crisp and turkey is cooked through (quick-read thermometer registers 165°F when inserted into thickest part of thigh without touching bone), 3 hours 15 minutes-to-3 hours 45 minutes, adding water in 1 cup measurements if pan becomes dry. Carefully remove rack from pan; loosely tent turkey with foil to keep warm before carving (at least 30 minutes and up to 1 hour).

Make the Gravy:
4. Straddle roasting pan between two burners over medium-heat; bring drippings to simmer. Add port. Cook, scraping up browned bits from bottom of pan, until port mixture boils. Carefully strain liquid through fine-mesh sieve into large measuring cup; discard solids. Skim off and reserve fat from measuring cup. Add enough chicken bouillon mixture to pan juices to equal 3 cups liquid total.
5. Add 6 tbsp. reserved fat (if there is less, add corn oil) to medium saucepan over medium-high heat. Using whisk, add flour and whisk occasionally until flour turns light golden brown and begins to bubble; about 1 minute. Whisk in reserved chile marinade; cook until beginning to caramelize, about 3 minutes. Add pan juice mixture. Cook, whisking vigorously to prevent clumps, until liquid comes to boil. Reduce heat to low. Simmer, whisking occasionally, until gravy is thickened and smooth, about 5 minutes. Season with Adobo, if needed.
6. Transfer turkey to cutting board; carve. Arrange turkey on serving platter. Transfer any juices from cutting board to pot with gravy. Serve turkey with hot gravy.

Pastelillos


Ingredients

1 tbsp. Extra Virgin Olive Oil
½ lb. ground beef
½ medium yellow onion, finely chopped (about ½ cup)
¼ cup GOYA® Tomato Sauce
6 GOYA® Spanish Olives Stuffed with Minced Pimientos, thinly sliced
2 tbsp. GOYA® Sofrito
1 packet Sazón GOYA® with Coriander and Annatto
1 tsp. GOYA® Minced Garlic or 2 cloves garlic, finely chopped
½ tsp. GOYA® Dried Oregano
GOYA® Ground Black Pepper, to taste
1 package (14 oz.) GOYA® Discos (Yellow or White), thawed
GOYA® Corn Oil, for frying

Directions

1. Heat oil in a large skillet over medium heat. Add ground beef and cook until browned, breaking up meat with a wooden spoon, about 10 minutes. Add onions and cook until soft, about 5 minutes more. Stir in tomato sauce, olives, Sofrito, Sazón, garlic, oregano and black pepper. Lower heat to medium-low and simmer until mixture thickens, about 15 minutes.
2. On a lightly floured work surface, using a rolling pin, roll out discos until ½” larger in diameter. Spoon about 1 tbsp. meat mixture into middle, fold in half to form a half moon; moisten edges with water and pinch to seal closed, or seal with a fork.
3. Fill a deep saucepan with oil to a depth of 2½”. Heat oil over medium-high heat until hot but not smoking (350°F on deep-fry thermometer). Cook Empanadas in batches until crisp and golden brown, flipping once, 4 – 6 minutes. Transfer to paper towels to drain.

Tortolias whit stuffed Potatoes

  • 1-3/4 cups vegetable oil for frying (I use plain olive oil, but never a great extra-virgin)
  • 1-3/4 lb. (about 5 medium) low- to medium-starch potatoes, such as Yukon Gold, peeled
  • 2-1/4 tsp. coarse salt
  • 12 to 14 oz. onions (2 to 3 medium), diced
  • 5 medium cloves garlic, very coarsely chopped (optional)
  • 6 large eggs
  • 1/8 tsp. freshly ground black pepper (optional)
In a 10-1/2-inch nonstick skillet that's at least 1-1/2 inches deep, heat the oil on medium high. While the oil is heating, slice the potatoes thinly, about 1/8 inch. Transfer to a bowl and sprinkle on 2 tsp. of the salt, tossing to distribute it well.
When the oil is very hot (a potato slice will sizzle vigorously around the edges without browning), gently slip the potatoes into the oil with a skimmer or slotted spoon. Fry the potatoes, turning occasionally (trying not to break them) and adjusting the heat so they sizzle but don't crisp or brown. Set a sieve over a bowl or else line a plate with paper towels. When the potatoes are tender, after 10 to 12 minutes, transfer them with the skimmer to the sieve or lined plate.
Add the onions and garlic (if using) to the pan. Fry, stirring occasionally, until the onions are very soft and translucent but not browned (you might need to lower the heat), 7 to 9 minutes. Remove the pan from the heat and, using the skimmer, transfer the onions and garlic to the sieve or plate with the potatoes. Drain the oil from the skillet, reserving at least 1 Tbs. (strain the rest and reserve to use again, if you like) and wipe out the pan with a paper towel so it's clean. Scrape out any stuck-on bits, if necessary.
In a large bowl, beat the eggs, 1/4 tsp. salt, and the pepper (if using) with a fork until blended. Add the drained potatoes, onions, and garlic and mix gently to combine with the egg, trying not to break the potatoes (some will anyway).
Heat the skillet on medium high. Add the 1 Tbs. reserved oil. Let the pan and oil get very hot (important so the eggs don't stick), and then pour in the potato and egg mixture, spreading it evenly. Cook for 1 minute and then lower the heat to medium low, cooking until the eggs are completely set at the edges, halfway set in the center, and the tortilla easily slips around in the pan when you give it a shake, 8 to 10 minutes. You may need to nudge the tortilla loose with a knife or spatula.
Set a flat, rimless plate that's at least as wide as the skillet upside down over the pan. Lift the skillet off the burner and, with one hand against the plate and the other holding the skillet's handle, invert the skillet so the tortilla lands on the plate (it should fall right out). (See How to do the flip for photos of this process.) Set the pan back on the heat and slide the tortilla into it, using the skimmer to push any stray potatoes back in under the eggs as the tortilla slides off the plate. Once the tortilla is back in the pan, tuck the edges in and under itself (to neaten the sides). Cook until a skewer inserted into the center comes out clean, hot, and with no uncooked egg on it, another 5 to 6 minutes.

TEXAS CAVIAR

2 to 3 14.5oz diced tomatoes=drained

1 -4oz can can chopped green chilies

1 - 4oz can chopped black olives

1 - 16oz can black beans= rinsed

1 - 16oz can black eyed peas = drained

1 bunch of fresh cilantro chopped

3 or 4 green onions diced

1 - 8oz package shredded Monterrey jack/cheddar cheese

1 - 16oz bottle Italian dressing-

Just mix it all together and let it chill for about 3 hours . Sometimes I also replace a can or two of the tomatoes with fresh Roma tomatoes. And some people omit the beans. YOU Can add corn too. I add some Jalapenos too .

Parboil tomaotes till skins split.

put into bowl of Ice water.. Peel tomatoes, core and cut... Put into colander and let drain for hours into bowl in frig. to get out all the excess water in the tomatoes. I let mine drain over night in refrigerator.

take all seeds out of bell peppers and jalapenos.Be sure to wear gloves

Dice peppers, onions, jalapenos and cut green onions

press garlic , and chop cilantro ( I use jar garlic )

Mix all ingredients togather salt and pepper.. and mexican oregano.. ad a small amount of vinegar

Beef and cheese enchiladas

Heather Ann's Beef and cheese enchiladas 

  • 4 cups browned hamburger meat
    4 Tbsp olive oil
    1 1/2 cups onion
    30 oz green enchilada sauce
    6 oz cream cheese, cut into medium size pieces
    2 tsp cumin
    16 flour tortillas (I used the large ones)
    Sliced black olives, as much as preferred


    Sauté onions in olive oil until tender and then add hamburger meat, 1/2 cup green enchilada sauce, cream cheese, and cumin. Continue to cook and stir until cream cheese has melted then stir in 2 cups if shredded cheese and remove from heat. Divide the mix between the tortillas and place in a baking dish, lightly sprayed with cooking spray, with the seam down. Top with remaining enchilada sauce, cheese, and olives. Bake at 350F for 20 minutes or cheese is melted.

Uncle Jake's Chili

 Uncle Jake's Chili
1 ea Bell Pepper, onion chopped
1 (14 ounce) can stewed tomatoes
4 (8 ounce) cans tomato sauce 
2 (14 ounce) cans kidney beans
1 (10 ounce) can diced tomatoes
1 (1 1/4 ounce)  mild/hot chili seasoning to taste
2 lbs Hamburger

Directions:
In 1-6 Qt pot Brown hamburger. 

Add all canned contents, Chili powder, onion and pepper.
Add 28 Oz. water
Stir to mix all ingredients well. Let simmer until onion and pepper is tender.
Add pepper and chili powder to taste.
3. Serve hot over rice or alone with crackers or bread and butter
4. Freeze the leftovers

5 layer chicken burritos

Ingredients 

Velvetta
Chicken (cut into thin strips)
Can of corn
Refried beans (seasoned to taste)
Sour cream
Tortilla

Cook chicken with taco seasoning
Prepare beans
Heat up tortillas
Add corn (drained) into chicken mixture
Make your burritos (add cheese sour cream beans corn and chicken mixture)
Melt it all together in microwave after rolled up
