1 lb ground beef round or 1 lb ground sirloin
1 tablespoon fat like lard or Crisco (if meat is round or sirloin)
Salt & Pepper to taste
1 small Onion, chopped fine
water to cover
sliced dill pickles
Using a cast iron skillet with lard/crisco brown meat
& onions till done, drain off
grease if any and return to skillet.
Break ground beef up in skillet into small crumbles
using the back of a wooden
spoon.
Add 1 Tbsp Yellow Mustard, 1 Tbsp White Vinegar
and 1 Tbsp Sugar and just
enough water to barely cover meat in the pan.
Cook, at a simmer, till water is all cooked out-
between 15-20 minutes.
Heat your hamburger buns-they're traditionally
steamed for loose meats.
When buns are warm, put yellow mustard on them
and add some dill pickle
slices
NOTE: *If you start changing this recipe and using
things like olive oil for the
fat
and Dijon or honey mustard for the yellow mustard,
And don't add any liquid
smoke or Worcestershire sauce, you will not get the
traditional yummy taste of
a loose meat sandwich.

1 lb hamburger meat
2 heaping tablespoons of chopped fresh rosemary leaves (not the stem)
2 Tbsp A1 sauce
3 cloves crushed and minced garlic
Salt and pepper to taste
Buns
Any toppings you desire
Mix the rosemary, A1 sauce, and garlic into the hamburger meat, distributing evenly. Add salt and fresh ground pepper. Form out the hamburger patties. Place on a hot grill or grill pan.
If you are indoors with a grill pan, be sure to use your stove fan. If on grill pan, lower the heat to medium high. Grill on one side until you can see the juice begin to run at the surface. Flip over and grill on the other side, again until you can see some juice coming through. If you wish, brush the cut side of the buns with olive oil or melted butter and toast on remaining grill surface. Make it you own by adding any toppings you like. Lettuce, tomato, sauteed onions and mushrooms with swiss cheese, guacamole, a spicy aioli. The choices are endless.

Fry 1 pound hamburger, ground turkey or chicken,
mix in a packet of taco seasoning,
add 1 can drained and rinsed black beans and one of pinto beans.
Then you can eat it in a bowl, wrapped up in a tortilla, taco filling, as topping for nachos, topping for
eggs, taco salad - however you would like to eat it. I always serve with shredded cheese, diced onion,
shredded lettuce, diced tomatoes and hot sauce.

Cabbage rolls

- 1 large green cabbage
- 1 lb. hamburger
- 1 lb. bacon, chopped fine
- 1 cup Minute Rice
- 1 large onion
- salt and pepper to taste
- 2 cans campbell's tomato soup, condensed
How to make it
- First soften the cabbage leaves. Put a large stock pot of salted water on high heat. Carefully cut about two inches of the base of the cabbage core out. I usually make a square incision around the core and then cut corner to corner of the square and lift the pieces out. This will enable the leaves to be peeled off easier once they are steamed. Immerse your cabbage gently in the water (you can do this right away before the water gets boiling) and then once the water starts to boil vigorously turn the heat down to medium. As the leaves on the outside of the cabbage get steamed and go limp, gently pull them out of the pot and lay them on a clean tea towel to cool. When the leaf is cool, get a sharp paring knife and shave the majority of the thick vein of the leaf off so there are no hard bits at the end.
- While the leaves are cooling, cook rice, then brown the hamburger, bacon and onion together. Add cooked rice and season to taste with salt and pepper. Let cool.
- Once you have your leaf prepared, put a good sized spoonful (maybe two tablespoons worth depending on the size of the leaf) of the meat mixture near one end of the leaf. Fold in sides of leaf and then roll up. Pack cabbage rolls close together in a greased casserole dish. Mix and heat 2 cans of tomato soup in a saucepan with about 1 1/2 cans of water and pour over cabbage rolls in dish. Cover and cook at 325F for 2 hours. Enjoy!
