Shrimp and sausage Jambalaya
Ingredients:
2 tablespoons butter
8 oz spicy smoked sausage, 1/4" thick
2 tablespoons paprika
1 tablespoon cumin, ground
1/2 tablespoon ground red pepper
1/2 tablespoon black pepper
1 tablespoons salt
1/2 cup fresh or canned diced tomato
1 diced green bell pepper,
2 celery stalks, 1/4" thick
4 thinly sliced green onions,
1 cup dirty rice
3 cups chicken broth
1 pound shrimp, large or extra large
Directions
Melt the butter over medium heat In pot with a lid. Then add the sliced sausage, stirring, for about 5 minutes. then add the paprika, , cayenne, cumin,salt & black pepper. Saute for about 1 minute. Next add the tomatoes. Keep stirring for a few minutes to cook off liquid. Add the celery, green pepper,and onions. Simmer while stirring for 5 minutes.
Place the rice, stock and in and keep stirring on high heat. Reduce the heat to low allow to simmer. Place lid on the pot and simmer for about45 minutes, stir occasionally. Check to see when the rice is done. When the rice is done, stir in the shrimp, simmer for 5 minutes. Add additional seasoning to . Jambalaya is usually served in bowls with green onions. Also can be served on a bed of white rice. ENJOY.

This needs to be turned into a crockpot recipe. I would sub. chicken for shrimp too, but that's just my preference :-).
ReplyDeleteThis recipe differs quite a bit from jambalaya here in New Orleans. Just be sure the rice isn't over cooked. Also ALL ingredients should be cooked in one pot. Jambalaya isn't served "over" rice, because it already has rice in the dish. :)
