Ingredients
Red pepper
Zucchini (Courgette)
Onion
Garlic
Chili powder
Cumin
Flour shells
Oil for cooking
For Salsa
Tomatoes
Cilantro (coriander)
Red onion
Homemade salsa
I make this first so it can set in the fridge and the flavors can mix.
cut into pieces and mix tomatoes, red onion and cilantro (coriander) stir and put in fridge until needed.
Fry up some garlic, onions and red peppers
Grate zucchini (Courgette)
Add zucchini (Courgette) to the pan with the onions, red peppers and garlic season with chili powder and cumin (to taste)
Transfer to small pan with lid and place on small burner on very low heat.
Fry flour shells in a good oil (I use sunflower oil) until soft or crispy, your choice.
Drain well and I like to sprinkle the shells with grated cheese
Put filling into shell
Top with what you desire, I use cheese, the salsa and sour cream. Enjoy
