Shell fish Etouffee. Crawfish, Crab, Lobster your choice
2 pounds shell fish
2 sticks of real butter
1 cup minced red or regular onions
1 cup minced celery
1/2 cup minced red pepper
1/4 cup minced garlic
1/2 cup tomato sauce
1 cup heavy whipping cream
1/8 tsp. of basil & thyme
1/2 cup minced scallions
1/4 cup chopped parsley
Use a Quality Cajun Seasoning & salt and pepper to tasteMelt butter over a medium. Add all minced ingredients . Simmer over low heat until soft. Next tomato sauce and 1/2 shell fish. Add heavy whipping cream, basil, thyme, and bay leaf. Bring to a good boil, let simmer and allow shell fish to simmer about 20 minutes. Lastly add onions and parsley. Once the sauce is thickened add the remainder of the shell fish, pepper, Cajun seasoning and salt to taste. Let simmer while stirring for 10 minutes. Serve over dirty or white rice or alone which ever you prefer.
