CHEF BERNIE GUZMAN'S - REAL HOUSEWIVES OF BEVERLY HILLS ASPARAGUS CUPCAKES W/ VANILLA “NEON” FROSTING You really don't taste the ASPARAGUS… I trimmed the ASPARAGUS by removing and discarding the wooded ends. Sliced the ASPARAGUS in ½, saved the tender tips for later. Use the remaining pieces, minced inside the food processor. Preheat oven - 350 DEGREES COOK TIME – 20-25 – MINUTES CUPCAKES 3- large eggs 1-cup sugar ( I used BAKERS sugar) ½ -cup light Brown sugar ½-cup vegetable oil ½ -cup orange juice 1- Tsp - maple extract 2-1/2 cups- all purpose flour 2- tsp – ground cinnamon 2- tsp - baking powder 1-tsp - baking soda ½ -tsp – kosher salt 1-1/2-cups – minced STOCKTON ASPARAGUS - (Fresh, not cooked) COMBINE- first 5 ingredients. Set aside COMBINE- remaining ingredients – including the minced STOCKTON ASPARAGUS (we want the STOCKTON ASPARAGUS to cling and not fall to the bottom of batter) COMBINE – both ingredients – stir well. Fill ¾ full – in a paper lined muffin/cupcake pan - BAKE - on 3rd rack in the oven until done. EASY COOKED - VANILLA “NEON” FROSTING - FROSTS – 24 CUPCAKES “make your life easier, prepare ahead of time”… 1- CUP – WHOLE MILK - (no cheating) 5- TBSP- ALL PURPOSE FLOUR 2- TSP- VANILLA EXTRACT 2- STICKS OF BUTTER 1- CUP- BAKERS SUGAR 1- 3.5 oz. – INSTANT VANILLA PUDDING & PIE FILLING 1- TSP - NEON GREEN FOOD COLORING STEP-#1 -MEDIUM HEAT- (non-stick pot) heat first 3 ingredients-whisking to thicken– 3 minutes. Once thickened well – set aside - COOL COMPLETELY. (No shortcuts) STEP-#2- Combine last 4 ingredients – whisk until light & fluffy – 3- minutes. Combine both STEPS and whisk until frosting resembles WHIPPED CREAM. (I used a hand held mixer) Use immediately *ONCE REFRIGERATED, FROSTING WILL SOLIDIFY, DUE TO THE BUTTER CONTENT *frosting lasts 5 days- but is usually gone before then.
