 Deconstructed Spinach Cobb Salad

Organic Baby Spinach (whatever brand you like) for this I used 2 since there were 7 people
2 cups of mushrooms chopped small
1 Large English Cucumber skinned and chopped small
2 Cups grape tomatoes halved lengthwise
4 boiled eggs (trick to boiling start in cold water, put a teaspoon of salt and about a teaspoon of vinegar in the water bring to a boil, turn off the flame cover for 20 minutes. They will peel perfect) You can either chop or slice these.
6 slices crisp applewood bacon chopped
2 cups craisins
You can assemble this salad to your liking. I made this for a group of friends so I had to transport it. I always live by the rule, of eating with your eyes so I wanted it to be pretty and mix the colors. Start your bottom layer with the Spinach. Assemble everything in rows or if you are using a circular container do it in circles except for the craisins and bacon bit. Once everything is assembled and appealing to the eye sprinkle the craisins and bacon all over the salad.
This is can be paired with a light dressing of your choice. I would recommend some type of vinaigrette that is not sweet because of the craisins.
