Beef and cheese enchiladas

Heather Ann's Beef and cheese enchiladas 

  • 4 cups browned hamburger meat
    4 Tbsp olive oil
    1 1/2 cups onion
    30 oz green enchilada sauce
    6 oz cream cheese, cut into medium size pieces
    2 tsp cumin
    16 flour tortillas (I used the large ones)
    Sliced black olives, as much as preferred


    Sauté onions in olive oil until tender and then add hamburger meat, 1/2 cup green enchilada sauce, cream cheese, and cumin. Continue to cook and stir until cream cheese has melted then stir in 2 cups if shredded cheese and remove from heat. Divide the mix between the tortillas and place in a baking dish, lightly sprayed with cooking spray, with the seam down. Top with remaining enchilada sauce, cheese, and olives. Bake at 350F for 20 minutes or cheese is melted.
