There
isn't a real recipe. I just throw in what seems right. The
ingredients started out as your basic enchilada pie and then went
sideways. We didn't have enough enchilada sauce or tortillas, so we
used corn chips, some Rotel and some salsa to make up the difference.
Poured some of the juice from the chilies in the pot too. Threw some
provolone cheese we had lying around on top with green onions.
Here's what I started with.
Mexican Lasagna
1 lbs hamburger
1 cans kidney beans
1 pkg. taco seasoning (Taco Bell brand is best)
1 medium onions
1 lbs bag Mexican shredded cheese
1 - 30 oz can enchilada sauce
1 large cans sliced olives (or 2 small cans)
1 - 30oz can whole chilies
1 bag corn chips (white corn is best)
diced green onions
Cook hamburger, onion and taco seasoning (I added a can of whole tomatoes when I added the seasoning)
Layer the above ingredients (half at a time)
Cook at 350 for 30-40 minutes
Top with sour cream and shredded lettuce
