Prepare a can of tuna as you perfer, I dress it with a part mayo, part Greek yogurt mixture, pepper,
onion powder, lemon zest. Add salt
in lightly to get desired taste (you use less salt this way)
Then slice
zucchini squash lengthwise in four slices, brush with small amount of
extra virgin olive oil and salt and pepper. Now you can either put the
slices on grill or brown in a pan. Either way it takes less than 2 minutes.
Place slices on plate and pile tuna on slices.....if you feel fancy dice
some tomatoes on top and if you not watching weight add some cheese...You will not miss the bread!
