Super healthy chili

This is my super healthy chili  I make it all the time because it's healthy and

filling at the same time (and if you make a big batch you can freeze it and it's

pretty cheap if you make a bunch... it sounds like it has a lot of ingredients but

you don't have to put them all in)

INGREDIENTS

-1 lb ground beef

-1 onion

-1 green pepper

-1 orange pepper

-1 red pepper
-

1 stalk celery

-1 carrot

-1 jalapeno

-1 clove garlic

-1 cup corn (frozen or a can)

-1 can diced tomatoes (or use fresh)

-1 can mixed beans (or soak about a cup of mixed beans)

-1 tbsp chili powder, ½ tbsp cumin, ½ tsp pepper, 1 tsp salt… these are all

guesstimates… you can play around with the

spices if you want

Directions -

Small dice on all of the vegetables

-In a medium pot, cook the ground beef and onion on medium heat (break it all up) –it doesn't have to be cooked through just

break it all up and cook it a bit. Season with salt and pepper

-To make it even easier of a recipe… stir in the rest of the ingredients one at a time

-Add in the spice mixture

-Stir and let it simmer for about half an hour (until the vegetables cook through)

-Toppings: splash of lime juice, cheese, sour cream, bacon, green onions

-Served with: Bread and garlic butter (mince ½ clove garlic into ¼ cup softened butter and add fresh or dried parsley… it’s my

favorite lol)
