I made this for lunch yesterday. I saw it in the Kraft Food and Family magazine, but I tweaked it a bit.
What you will need:
4 small boneless skinless chicken breasts (1 lb)
1/4c Greek Vinaigrette dressing (I used light balsamic vinaigrette)
6 flour tortillas (I used whole wheat)
1 container (7 oz) original hummus
6 romaine lettuce leaves
1 large tomato, cut into thin slices
1/3 c traditional crumbled feta cheese (I opted out of this)
Putting it together:
Heat greased grill to medium heat
Grill chicken 6 to 8 minutes on each side or until done (165 F)
Cut chicken into thin strips; place in medium bowl. Add the dressing; toss to coat evenly
Spread tortillas with hummus, top with lettuce, tomatoes, chicken, cheese and roll up
Add some spice and switch the hummus to Roasted Red Pepper-I used this for more flavor
